Honey Roasted Beets

If you like beets this is a very tasty and impressive dish. It takes a little effort but well worth it. This is a great recipe to serve alonside just about anything but I serve it wish pork tenderloin, gouda mashed potatoes, lemon slices and a good bread.
Ingredients:
3-1/2 pounds assorted medium size fresh beets greens trimmed
cooking spray
1/3 cup honey
1/4 cup sherry vinegar
2 tablespoons unsalted butter softened
2 tablespoons water
1 teaspoon finely grated orange rind
1 teaspoon minced fresh thyme leaves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Directions:
1. Pierce beets with fork tines then arrange beets and 3 cups water in a microwave safe dish.
2. Seal airtight with double layer of plastic wrap then microwave on high for 10 minutes.
3. Drain beets and let cool to the touch.
4. Peel off and discard skins.
5. Cut beets into quarters and crosswise slices then place in large bowl.
6. Heat oven to 425 then coat a large nonstick baking pan with cooking spray.
7. In small bowl combine honey, vinegar, butter, water, orange rind, thyme, salt and black pepper then pour over beets and toss.
8. Transfer beets to a baking pan and roast in oven turning occasionally for 20 minutes.
9. To serve transfer beets to a bowl and serve warm.
