This can be made up to 2 days ahead, and stored in the fridge. Serve it with fresh fruit, such as strawberries, bananas, or wedges of rockmelon, pineapple or honeydew.
Ingredients:
250 g fresh low-fat ricotta
1/3 cup diet vanilla yogurt
2 teaspoons clear honey
fruit, to serve
Directions:
1. Place ricotta, yogurt and honey in a medium bowl. Using a stick mixer, blend until smooth. Serve with fruit.
