This is one of my favorite chicken dishes. Healthy low fat/cal dish. (I've had this recipe for well over a decade. I don't know where it came from. Ingredients:
2 tbs cornstarch
1/2 tsp salt
1/8 tsp pepper
4 skinless, boneless breast halves (aprox 20oz)
2 tbs butter
1/2 cup chicken broth
2 tbs orange juice concentrate
1 tbs dijon mustard
1/2 tsp honey
2 tbs chopped parsley (optional)
orange slices (optional)
Directions:
1. In a plastic bag or small paper bag, combine the cornstarch, salt and pepper and shake to mix. Add the chicken and shake to coat the chicken lightly. (I dry off the chicken so the cornstarch mixture wont clump up) Remove the chicken and reserve the excess cornstarch mixture
2. In a large skillet, melt 1 TBS of butter over medium heat until hot but not smoking. Add the chicken and brown on one side, about 5 min
3. Add the remaining butter, and brown other side. Transfer chicken to a plate and set aside
4. Dissolve the reserved cornstarch mixture in the chicken broth
5. Wisk the broth, orange juice concentrate, mustard and honey into the juices in the skillet. Bring the mixture to a boil over medium heat, stirring constantly
6. Add the chicken, reduce heat to medium-low and cover. Cook until chicken is tender and opaque throughout, 5-8 minutes
7. Serves 4. Sprinkle with parsley and garnish with orange slices, if desired
