Ingredients:
3/4 cup(s) panko
1 tablespoon(s) finely chopped fresh sage or 1 teaspoon dried sage
1 teaspoon(s) grated fresh lemon rind
1/2 teaspoon(s) black pepper
1 egg
2 tablespoon(s) water
1 tablespoon(s) dijon mustard
1 tablespoon(s) mayonnaise
4 pork cutlets
3 tablespoon(s) olive oil
3 lemon wedges (optional)

5. Combine first 4 ingredients on plate.
6. Whisk egg and 2 T water in medium bowl to blend.
7. Whisk mayonnaise and Dijon mustard in small bowl.
8. Dredge pork cutlets with mayo-mustard mixture; dip into beaten egg, then coat with panko crumb mixture.
9. Transfer to plate.
10. Heat oil in heavy medium skillet over med-high heat.
11. Add pork; cook until no longer pink on inside and crumbs are golden brown, about 5 minutes per side.
12. Garnish with fresh sage, if desired, and serve with lemon wedges.
