Honey Herb Roasted Chicken

Ingredients:
2 to 2.5 kg chicken, cleaned and dried
2 tsp salt
1 tsp pepper
1/2 lemon, sliced
1/4 c fresh parsley
1/4 c fresh rosemary
1/2 c honey
Directions:
1. Marinade the chicken with salt and pepper, rubbing inside and outside of chicken. Set aside for 2 hours.
2. Stuff lemon, herbs in the chicken cavity.
3. Preheat oven and roast chicken breast side down at 375 degrees basting occasionally for 25 minutes. Brush with some honey.
4. Turn breast side up and roast at the same temperature for 20 mins.
5. Brush some more honey as need.
6. Turn temperature up to 425 degrees and roast to brown the chicken for 10 mins.
7. Rest chicken in tented foil for 10 minutes before carving.
