nice salad to accompany any dinner.
Ingredients:
2 tablespoons balsomic vinegar
1 teaspoon honey
6 cups arugula, chopped
2 tablespoons olive oil
1 tablespoon minced shallot
1 tablespoon chopped fresh parsley
1 teaspoon dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, crushed
1/4 cup sliced red onion
1/4 cup shaved parmesan cheese
2 tablespoons walnuts
Directions:
1. Combine all ingredients in a bowl, except for onions,argula, walnuts, and stir well with a whisk.
2. Add argula, onions, and walnuts, and toss gently.
