Honey and Molasses Harvest Cookies

Ingredients:

  • 1/2 cup honey
  • 1/2 cup molasses
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 1 pinch salt
  • 1 1/2 cups oats
  • 1/2 tsp baking soda
  • 1 small apple
  • 1/2 cup raisins
  • 1 tbsp butter

Directions:

  1. Put butter in a small bowl. Finely chop the apple and add to the butter. Microwave for 30-45 seconds until butter is melted and apple is slightly softened. Stir to coat apple.
  2. Add egg, vanilla, honey, and molasses. Set aside.
  3. In large bowl, combine oats, flour, baking soda, cinnamon, nutmeg, cloves, and salt (you can change the proportions to suit your taste, even add some ginger if you want to!). Add raisins and then pour in the liquid ingredients.
  4. Bake in 200 celcius/180 fan/something around 375 F oven for 10 minutes. This recipe works best with small cookies - if you make 3 1/2 dozen (ok, 44) they will be 50 cal cookies!
  5. Also, if you make these in yorkshire pudding tins (the really tiny or half muffin tins) they will be more like soft cakes and look very pretty! mmm...
