Ingredients:

  • 1 cup hominy
  • 1/2 cup corn meal
  • 1/2 tsp salt
  • 1 cup milk

Directions:

  1. Combine hominy, shortening, eggs and milk. Add corn meal, salt, and baking powder. Let stand 5 minutes. Add 1 TBS more milk if desired. Pour into large, well oiled pan and bake in hot oven (425) for 35 minutes, or until rich golden brown.
