Homestyle Whole Wheat Peach Cobbler

Try whole wheat pastry flour also. You'll be surprised how delicious a cobbler can be by using whole wheat flour too!
Ingredients:
1/2 cup butter, melted
4-5 cups fresh peaches, peeled, pitted, and sliced
2 tsp. lemon juice
3 tbs. white sugar + 1 cup white sugar, separated
1/4 tsp. salt
1 tsp. baking powder
1 cup whole wheat flour
1 tsp. ground cinnamon
1/2 cup milk
1 tsp. vanilla
Directions:
1. Preheat oven to 350F (175C).
2. Pour butter in the bottom of a large casserole or 9x13 inch pan.
3. In a bowl, toss the peaches with lemon juice. Add 3 tablespoons sugar and toss again to coat.
4. Pour into pan.
5. In a mixing bowl, combine remaining ingredients and stir gently.
6. Spoon batter over the peaches.
7. Bake for 45 minutes in the preheated oven, or until the cobbler is bubbly and the top is golden brown.
8. Serve warm or cold.
