Homestyle Breakfast Burritos

We usually don't have time for a good sit down breakfast until the weekends, but then I go back and forth between classic bacon and eggs and this recipe as two of my favorite staples.
Ingredients:
1/2 lb sausage (your choice) or 1/2 lb bacon (your choice)
2 jalapenos, diced
1 small onion, diced
1 diced tomato
1/2 green bell pepper, diced (or substitute garden banana peppers)
3 eggs, scrambled
1/2 cup shredded taco cheese
1 small bunch chopped fresh cilantro
1 garlic clove, fresh, minced
1/2 teaspoon taco seasoning
1/4 teaspoon salt
1/4 teaspoon black ground pepper
1/4 teaspoon ground cumin
4 flour tortillas, shells
Directions:
1. Start the meat browning in a skillet. Sometimes I use chopped up bacon and sometimes fresh sausage - both work equally well.
2. While that is going dice up the peppers, onions, and tomatoes and then add in to cook with the meat.
3. Stir in three eggs and the seasonings, cilantro, and garlic. Scramble the eggs in the skillet and stir in with all the other goodies. ( I just move the other stuff to the side and cook the eggs in the middle to keep it a one skillet meal). Turn off heat when eggs have cooked.
4. Warm 4 tortilla shells (20 seconds in microwave), fill with your breakfast goodies and then top them with cheese and salsa, and roll them up to eat.
