Prepare pressure cooker veggie stock, using whatever leftover whole veggies available. Simmer at 10lb of pressure for 45 minutes. Drain broth through a strainer, keeping only the broth and discarding the cooked vegetables
Ingredients:
add the following chopped ingredients you have on hand, similar to these
1 cup onion
2 cups celery
2 cups cabbage
1 cup carrots
2 cups potatoes
1 cup kale
1 cup mushrooms
1 cup lentils
1 cup barley
Directions:
1. Bring all of the following ingredients to a boil until tender.
