Homemade Spaetzel

Easy homemade German noodles that you don't have to knead, roll or shape.
Ingredients:
2 cups all-purpose flour
4 eggs, lightly beaten
1/3 cup milk
2 tsp. salt
1 tbsp butter
2 tbsp. fresh parsely, chopped (optional)
water for boiling
Directions:
1. Stir the flour, eggs, milk and salt in a bowl until smooth (dough will be sticky).
2. In a lg. sacepan bring water to a boil. Making these is really a lot easier with a spaetzel maker (can be purchased for $15 online). If you don't have one, use a colander with large holes. Pour dough into a colander or spaetzel maker coated with non-stick cooking spray; place over boiling water.
3. With a wooden spoon press dough until pieces drop into boiling water. Take care, as the steam will be hot.
4. Cook for 2 min, or until dumplings float to the top. Remove with a slotted spoon. You can do this in batches. A really easy way is to put the dough into a ziplock, cut off a tiny corner and squeeze the noodles into the boiling water. They will in that case come out bigger and will need to be chopped when pulled out. The noodles on the picture were made using a colander with large holes.
5. Toss the cooked noodles with butter and toast lightly in a non-stick skillet.
6. Garnish with chopped parsely and serve with sausages, potato pancakes and sweet and sour red cabbage, or with any other meats and veggies.
