Homemade Seasoned Rice Mix & Chicken Rice Casserole

This rice mix is very popular in our home - goes well with chicken, pork or fish. It makes great gifts also when packaged in a jar with a nice ribbon. I make it with brown rice and adjust the cooking time as needed. The casserole is comforting and satisfying as well. The prep/cooking time is based on the casserole recipe. **NOTE** Where the ingredients list 1 cup rice, mix - it is calling for the Homemade Seasoned Rice Mix.
Ingredients:
3 cups uncooked long grain rice
6 teaspoons chicken bouillon granules
1/4 cup dried parsley flakes
2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
2 cups water
1 tablespoon butter
2 1/2 cups cubed cooked chicken
1 1/2 cups frozen mixed vegetables
1/2 cup chopped onion
1 (4 ounce) can mushroom stems and pieces, drained
2 cups water
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1/4 teaspoon onion salt
1/4 teaspoon dried thyme
1/4 cup crushed potato chip
Directions:
1. Combine all ingredients in a storage container with a tight-fitting lid.
2. Yield: 3-1/2 cups.
3. **TO PREPARE RICE AS A SIDE DISH**.
4. Combine 2 cups water and 1 tablespoon butter in a saucepan; bring to a boil.
5. Stir in one cup mix.
6. Reduce heat; cover and simmer for 15-20 minutes.
7. Yield: 6 servings.
8. **CHICKEN RICE CASSEROLE**.
9. In a greased 2-qt. casserole, combine chicken, vegetables, rice mix, onion and mushrooms.
10. Combine water, soup, onion salt and thyme; mix well.
11. Pour over the rice mixture; stir.
12. Cover and bake at 375° for 55-65 minutes or until the rice is tender, stirring occasionally.
13. Sprinkle with potato chips.
14. Yield: 6 servings.
