Homemade potato chips brings me back to Rome. In Rome on a small hidden piazza away from the tourist traps is a small trattoria ran by an Italian family that serves a fixed priced menu. The name of the restaurant is Ristorante del Pallaro. Read more . Part of the menu was just plain homemade potato chips and everytime I make them it brings me back to Rome which is one of my favorite cities of all times. Ingredients:
2 potatoes, thinly sliced (use a mandolin if you have one)
oil (veggie or peanut oil)
salt
Directions:
1. Fill heavy pot. I use my cast iron skillet full enough of oil to deep fry.
2. Oil should be about 350 degrees F.
3. Cook potatoes in batches. About 2 to 3 minutes.
4. Don't overcrowd because that drops your oil temperature a lot and you get a soggy chip.
5. Drain on paper towels and salt to taste.
