Homemade Pasta Dough

This recipe came from a cooking class I took - pretty tasty
Ingredients:
2 1/2 cups flour
1/3 cup water
2 eggs
1 egg yolk
1 tablespoon olive oil
1 teaspoon salt
Directions:
1. In a large bowl combine 1 cup flour and the rest of the ingredients with mixer on low speed. Mix about 2 minutes with spoon; stir in enough flour to make a soft dough; knead about 20 times until smooth and not sticky, adding more flour if necessary. Cover with a towel and let rest for 30 minute.
2. Put the dough through your roller or roll out onto a floured board to your desired thickness.
3. Let rest till dry and then boil till tender; flavor as desired.
4. Makes 1 lb dough.
