Homemade Pasta Dough

This is my mother's simple dough recipe. It is easy to make and serves 6 to 8 people with big appetites. You may need to use more flour than the recipe calls for , for rolling purposes and eggs very some in size which cause more moisture.
Ingredients:
7 -8 cups flour
2 large eggs, beaten
1/2 cup margarine, melted
1/4 teaspoon salt
1 -2 tablespoon water
Directions:
1. Place flour on a large cutting board.
2. Make a well in the flour.
3. Sprinkle with the salt.
4. Pour eggs into flour well.
5. Add margarine.
6. Knead forming a ball adding water as needed.
7. Cover, refrigerate for 1 hour.
8. Roll out using your favorite pasta machine.
9. At this point to can cook or freeze for later use.
