Ingredients:

  • 3 eggs
  • 1/4 cup flour
  • 3/4 cup dry mustard (such as keen's)
  • 1 tsp salt
  • 2 cups sugar

Directions:

  1. In a microwave safe bowl (no less than a 6 cup measure) mix the evaporated milk,vinigar and eggs.
  2. Mix together the flour,mustard,salt and sugar and add to the wet ingredients.
  3. Mix well.
  4. Place in microwave and cook for 2 minutes on high.
  5. Stir or whisk until smooth then place back into the microwave and cook for another 2 minutes repeat until thickened This will take 3 or 4 times.
  6. 1/4 teaspoon curry or cayenne can be added.
  7. Pour into hot jars that can be sealed. Once open store in fridge.
  8. Note: My microwave is a 1000 watt and I cook the mixture a total of 4 times which is perfect.
