Homemade Granola Mike's Coconut Amond Mix

I recently discovered the joy of making homemade granola. Not a big cereal lover and would never purchase store bought granola after tasting homemade. The following recipe was developed for my father incorporating several ingredients he loves and limiting refined sugars. Be careful to use unsweetened coconut flakes or shaved (may be available from a health food store in the bulk section). I use raw almonds, do not use already roasted almonds as you are going to roast them!
Ingredients:
1/2 cup honey
1/4 cup canola oil
1 teaspoon almond extract
2 teaspoons vanilla
1 teaspoon cinnamon
1/2 teaspoon kosher salt
1/4 cup brown sugar
3 cups old fashioned oats
1 1/2 coconut flakes
1 cup blanched almond
1/2 cup slivered almonds
1 cup whole almond
1 cup dried cherries
Directions:
1. In a 1 cup pyrex measuring cup combine first 6 ingredients. In a large bowl combine remaining ingredients except dried cherries (those go in after cooking). Stir to evenly distribute nuts and granola. Drizzle honey mixture overs this and stir with a rubber spatula. Mix for about 5 minutes or until oats and nuts are evenly coated and wet . Spread out onto cooking sheet. Bake for about 90 minutes at 250 degrees. Granola will still be soft when you remove it. Spread out cherries over the top. Cool for minimum 30 minutes. Granola crips up as it cools so this cooling time is essential. Break up and transfer into airtight containers or gallon ziploc bag. Be prepared to enjoy the most heavenly smell in your house all day long. I enjoy granola with milk or in a yogurt parfait with plain Greek yogurt and fresh or frozen defrosted berries.
