Homemade Granola Bars

This is the recipe I use when I make granola bars. I took a recipe that a friend gave me and tweaked it until I got them to turn out the way I like. They don't fall apart, but are super chewy! The best part is that this is an awesome base recipe and you can experiment with any add-ins that you like. Read more . The list I have included of add-ins is just a brief one. The possibilities are endless! :)
Ingredients:
1/2 c. butter (softened)
3/4 c. brown sugar
1/2 c. honey
2 eggs
1/2 tsp. vanilla
3 1/2 c. oatmeal (quick cook)
1/2 c. - 1 c. of whatever you want from the following
almonds
dried cranberries
chocolate chips
m&m's
dried currants
dates
figs
etc.
Directions:
1. Preheat oven to 350
2. Grease a 9x13 pan
3. Beat butter, sugar, and honey until light and fluffy
4. Add eggs and vanilla, blend until smooth
5. Mix in remainder of ingredients
6. Press firmly into pan
7. Bake for 20-25 min. or until golden brown on the top
8. Allow to cool and enjoy!
9. Feel free to experiment with the add-ins. Use the top section as a base recipe and add whatever you feel like into it. I'm always trying new things in my granola bars. :)
