Homemade Ginger Beer

This ginger beer is very spicy. Adjust the amount of lime juice and sugar to your taste.
Ingredients:
2 lbs ginger, cut into 1 inch pieces
1 gallon boiling water
1 1/2 cups freshly squeezed lime juice (about 8 limes)
1 1/2 cups superfine sugar
Directions:
1. Place ginger in a food processor, and process until finely chopped.
2. Transfer to a large pot, and add boiling water.
3. Allow to stand for 1 hour.
4. Drain with a fine sieve lined with a double thickness of damp cheesecloth.
5. Discard solids.
6. Add lime juice and sugar, and stir to dissolve.
