2 tbsp. cornstarch
1-3/4 cup milk
2 tbsp. butter or margarine, cut into thin pats
***do not add the cocoa for a vanilla pudding
Directions:
1. Instructions:
2. Place cocoa, sugar and cornstarch in an 8-cup glass measure or deep microwaveable bowl and stir to blend. (If cocoa powder has lumps, sift first.)
3. Using a fork or wire whisk, briskly and gradually whisk in milk so there are no lumps.
4. Add butter.
5. Microwave uncovered on 100% power (High) 4 minutes.
6. Stir briskly.
7. Continue microwaving 2 minutes longer.
8. Stir to combine thickened edges with liquid center. Cook 1 to 2 minutes longer or until mixture thickens to a creamy, spoonable consistency.
9. Immediately place wax paper or plastic wrap directly on surface of pudding to prevent a skin from forming.
10. Serve warm or pour into dessert dishes and refrigerate.
11. Serving Suggestions:
12. Spoon warm pudding over angel food cake or pound cake.
