Nice and hearty. Great comfort food for those cold winter nights.
Ingredients:
2 lbs ground beef
3 (28 ounce) cans diced tomatoes
1 (28 ounce) can crushed tomatoes
2 (5 1/2 ounce) cans tomato paste
1 (14 ounce) can pork and beans in tomato sauce
1 (19 ounce) can pinto beans
1 (19 ounce) can white kidney beans
1 (19 ounce) can red kidney beans
1 (19 ounce) can black beans
1 (19 ounce) can chickpeas
2 (10 ounce) cans mushrooms (or use 8oz pkg of fresh mushrooms)
2 green peppers, chopped
1 large onion, chopped
1 large celery, chopped
1 tablespoon minced garlic clove
1 teaspoon frank's red hot sauce (optional)
1 teaspoon worcestershire sauce
2 tablespoons splenda sugar substitute
1 tablespoon cumin
4 tablespoons chili powder
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon salt
2 bay leaves
Directions:
1. Brown ground beef and put aside.
2. In a very large stock pot mix all can ingredients together.
3. Start at very low heat.
4. Add browned ground beef to mixture.
5. Chop all fresh ingredients and add to pot.
6. Add all remaining ingredients and simmer on low for 2 hours.
7. Remove from heat and serve or put aside for next days dinner.
8. Freeze in small containers for quick weeknight dinners.
