Homemade Cheese Puffs Supreme

Another one of mom's cocktail nibbles. NO day-glow orange cheese puff for her, just light puffy cheesy nibbles that worked well with a martini and some smoked almonds. Her standard before dinner nibbles. Nothing to kill the appetite during cocktail hour.
Ingredients:
2 egg whites, stiffly beaten
3 oz. of cream cheese, finest kind, softened
1/4 lb. of very sharp cheddar cheese, grated (white variety)
1 stick of butter
1 loaf of unsliced bread
Directions:
1. Remove crusts and slice bread into 1 inch cubes. Melt cheeses and butter in top of double broiler. Stir vigorously until melted.
2. Remove from heat and fold in egg whites.
3. Spear bread cubes and dip into mixture.
4. Shake off excess. Chill overnight on greased cookie sheet and sprinkle very lightly with paprika.
5. Bake 10-12 minutes at 400 degrees F.
6. Mom's note on the card. Out of this world, freezes well.
