Homemade BBQ Chicken With Vegetables

This recipe is a good way for us to get our children to eat their vegetables. Full of flavor and moist, the chicken turned out great.
Ingredients:
2 lbs chicken (use any that you like)
1 tablespoon extra virgin olive oil
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1/2 cup ketchup
1/4 cup water
1 1/2 tablespoons honey
1 1/2 tablespoons tamari soy sauce (healthier soy sauce)
1/4 teaspoon sea salt
1/8 teaspoon pepper
1 cup frozen corn
Directions:
1. Pre heat oven to 350.
2. Brown chicken in olive oil in a skillet.
3. Put chicken in 13 x 9 baking dish, no need to grease.
4. Saute onions, green peppers and celery until tender.
5. Combine ketchup, water, honey, tamari sauce, salt and pepper in a bowl.
6. Add to vegetables and bring to a boil.
7. Pour over chicken.
8. Cover and bake for 25 minutes.
9. Sprinkle with corn and bake 25 minutes longer.
10. Make sure chicken is cooked thoroughly and serve.
11. Enjoy.
