Holly Grit Balls Batman!

I wanted something quick and easy to do with left over grits so I came up with this extremely light and easy recipe! I hope you enjoy as much as we do!
Ingredients:
holy grit balls
1 1/2 cups cooked grits(cooked according to package directions)
2 slices of american cheese
1 or 2 sliced green onions (more or less to taste)(single not the whole bunch! lol)
salt and pepper to taste
2 tablespoons butter
2 tablespoons half and half
pinch of garlic powder
couple of dashes of hot sauce(more if you want a hotter version)
dash of tony’s or other cajun blend
1/3 cup mexican blend shredded cheese
egg wash
1 egg
1/4 cup milk
dash hot sauce
breading
1 cup italian style bread crumbs
dash coarse ground black pepper
cream sauce
2 tablespoons butter
1/2 cup heavy cream
leaves from celery(i used about 2 teaspoons)
few dashes of hot sauce
1/4 teaspoon oregano (i used dried)
pinch garlic salt
1/4 teaspoon tony’s or other cajun blend
(if you want you can add a little diced jalapeno to spice it up!)
vegetable oil for frying
Directions:
1. Fix the grits according to package directions.
2. Stir in half and half, butter, salt and pepper, and sliced cheese.
3. Let cool for at least 1 hour.
4. When ready to make stir the other ingredients (ball recipe)into the grits and roll the grits into small one- two bite size balls.
5. Beat egg with milk and hot sauce.
6. Dip ball into egg wash and then into breading.
7. Heat oil in small pan over med/ med low heat,
8. drop balls and cook until lightly browned.
9. Remove and drain on paper towels.
10. In a small saucepan, Melt butter, Add remaining ingredients and let cook over med/ med-low heat for 2 to 3 minutes.
11. If you are adding jalapeno, do it now and continue to cook 1 minute.
12. Serve balls with sauce drizzled over or on the side!
13. Enjoy!
