Holiday Rice Pudding

Ingredients:

  • 1 1/4 cups milk
  • 1 1/4 cups water
  • 1/4 cup sugar
  • 2 tbsp butter
  • 1 tbsp sugar
  • 1/2 cup slivered almonds, blanched

Directions:

  1. In a large saucepan, combine milk, water and the 1/4 cup sugar.
  2. Bring to a boil over high heat, stir in rice.
  3. Reduce heat. Simmer, uncovered, about 30-35 minutes or until rice is tender and liquid is absorbed.
  4. Remove from heat. Stir in butter and almond flavoring until well combined.
  5. Cool.
  6. Whip cream and beat in 1 Tbs sugar.
  7. Fold cream and almonds into pudding.
  8. Cover and chill at least 2 hours before serving.
  9. Serve with fresh raspberries, raspberry jam or sauce.
