Holiday Baked Macaroni

This is a must have during the holidays at my moms house. This is such a comfort food, it just would not be the same with out it.
Ingredients:
1 lb macaroni noodles (by luxury, looks like spaghetti noodles but fatter.)
1/4 cup butter
1/4 cup flour
2 cups half&half
1 egg (beaten)
8oz velveeta cheese (cubed)
2 cups shredded colby jack cheese
2 cups shredded sharp chedder cheese
salt and pepper
Directions:
1. Pre heat oven to 400 degrees
2. Boil noodles per package directions
3. Start by making a roux, melt butter in pot then add flour and stir constantly,will look like paste, cook for about 10 minutes. Add in half&half slowly and whisk as you do. Let cook till it starts to thicken then add egg, (do this by adding just a little of the warm milk mixture to the beaten egg and whisk as you do it to temper the egg so it does not turn into scrambled eggs on you.)salt and pepper to your taste. then you can add the egg to the pot and add in velveeta cheese and stir regularly till melted and you have your cheese sauce. Turn heat off.
4. Put half the noodles in baking dish and pour half the cheese sauce over it, then top with colby jack.
5. Put the remaining noodles on top and pour the rest of the cheese sauce on top and top with the chedder cheese.
6. Top with a few pats of butter and bake in the oven for about 45 minutes, or until cheese is melted and golden.
