hold the Mayo Blue Cheese Salad Dressing

I came across this recipe on the internet a few years ago. This is easy to make and simply delicious with just enough punch to get those taste buds a kickin'. I use red wine vinegar, but if you want to keep the blue cheese color, you can switch it out to white wine vinegar instead.
Ingredients:
1 garlic clove, minced
1/4-1/2 teaspoon dried oregano
2 teaspoons sugar
2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
4 ounces crumbled blue cheese
salt & pepper, to taste (optional)
Directions:
1. Whisk together first 4 ingredients (garlic, oregano, sugar, vinegar).
2. Very slowly add the olive oil while still whisking.
3. Carefully stir in the blue cheese, then give it a taste test. Add salt & pepper if choose to do so.
4. Pour dressing over some nice, crispy lettuce, like romaine hearts or an iceberg wedge - enjoy!
