Hoisin Chicken - South Beach

This is so good my family doesn't believe me when I tell them it's healthy. And SO easy!
Ingredients:
3 lbs boneless skinless chicken breast halves, cut into chunks
1/4 c hoisin sauce (i use whole foods 365 organic - 3g sugar/serving)
1/4 c sugar free apricot jam
1/4 c low sodium soy sauce
1 small pc ginger root, grated (i've used ground ginger in a pinch)
juice of 1 lime
3 t cornstarch
salt & pepper to taste
1-2 cloves garlic, minced
Directions:
1. Mix all ingredients except chicken together in a bowl
2. Add chicken and stir to coat
3. Put it all in the slow cooker
4. Cook on low 5-6 hours
