Well I did say I liked asian inspired foods here is another very tasty inexpensive asian type chicken dish. For those who have never tried hoisin sauce it is a mildly spicy yet sorta sweet sauce.
Ingredients:
4 whole skinless boneless chicken breasts cut into small serving sized pieces.
1/2 cup plus 1 tablespoon cornstarch
2 teaspoons grated fresh ginger
2 medium yellow onions chopped
8 oz fresh broccoli cut into 1 inch pieces
1 red or green bell pepper chopped
2 4 oz cans of whole button mushrooms drained
1 cup water
3 tablespoons dry sherry
3 tablespoons cider vinegar
3 tablespoons hoisin sauce
4 teaspoons soy sauce
2 teaspoons instant chicken bouillion granules
oil for frying
Directions:
1. Place the 1/2 cup cornstarch in a large bowl
2. add the chicken pieces and toss to coat well
3. heat oil in wok or larte skillet over high heat to 375 degrees
4. add chicken slowly 1/3 at a time and cook until golden brown and cooked throughly about 5 minutes
5. drain on paper towels
6. remove all but 2 tablespoons oil from wok or skillet
7. add ginger and stir fry 1 minute
8. add onions stir fry 1 minute
9. add broccoli red pepper and mushrooms stir fry for 2 minutes
10. combine remaining ingredients and 1 tablespooncornstarch in small bowl
11. add to wok cook and stir until sauce boils and thickens
12. add chicken back into mix heat through and serve
