This was a simple bread made over a hobo campfire in an empty tin can. Since beans were a staple of most hobos in the 1920's and 30's, it made sense to use everything you had available. Tin cans were often used as cooking vessels to heat meals, water for coffee and breads like this.
Ingredients:
• 2 cups raisins
• 1 1/2 cups boiling water
• 4 teaspoons baking soda
• 4 teaspoons butter, softened
• 1/2 cup granulated sugar
• 1/2 cup brown sugar
• 2 eggs
• 1 teaspoon salt
• 1 teaspoon vanilla extract
• 1 3/4 cups walnuts
• 4 cups all-purpose flour
Directions:
1. 1. Pour boiling water over raisins
2. 2. Let cool
3. 3. Stir in soda, then other ingredients
4. 4. Fill 6 or 7 greased and floured soup cans, 14 oz. to half full
5. 5. Bake at 350 for 45 minutes
