Ho Po Gai Ding (Chicken With Walnuts)

This was one of the favorite meals my Mom made when I was a kid.
Ingredients:
1 teaspoon sugar
1/2 teaspoon ground ginger
3 tablespoons soy sauce
2 garlic cloves (minced)
1 cup walnuts
2 large boneless skinless chicken breasts
3 tablespoons peanut oil
1 (8 ounce) can bamboo shoots, drained
1 tablespoon cornstarch
1 cup water
hot cooked rice
Directions:
1. Cut chicken breasts into bite-size pieces.
2. Combine sugar, ginger, soy sauce, and garlic in bowl.
3. Mix in chicken and let stand 20 minutes, stirring occasionally.
4. Heat oil in wok on high heat.
5. Add walnuts, stir fry for 1 minute, then remove walnuts from wok and set aside.
6. Add marinated chicken mixture to hot oil. Cook 5 minutes, stirring occasionally.
7. Mix in bamboo shoots.
8. Blend cornstarch and water and add to wok, stirring until thick.
9. Simmer 2 minutes longer, then mix in walnuts.
10. Serve over rice.
