These wonderful, hearty muffins are full of surprises. Sweetened primarily with honey and containing a veritable trail mix of goodies, they are perfect for a pick me up for an outdoor adventure or just a great way to start the morning! Read more !
Ingredients:
1 cup all purpose flour
1/2 cup whole wheat flour
3/4 cup oats
1/4 cup wheat germ(optional)
1/2t salt
1/2t baking soda
2t baking powder
1/3 cup honey
2t brown sugar
1/4 cup butter, softened or melted, and cooled
1 egg
1t vanilla
2t fresh orange juice
zest from 1 small orange
1 cup sour cream or yogurt
1 large ripe banana, mashed
1 small carrot, grated
1/4 cup shredded coconut(i used unsweetened)
1/4 cup chopped nuts
1/4 cup dried fruit(i used dried berry mix)
1/4 cup mini chocolate chips
Directions:
1. Combine flours, oats, wheat germ, salt, soda and baking powder and set aside.
2. In electric or stand mixer, combine honey, sugar and butter and mix well.
3. Add egg and beat well.
4. Add vanilla, OJ and zest and mix to combine.
5. Add dry ingredients alternately with sour cream, mixing well, but not beating, until all incorporated.
6. Fold in remaining ingredients.
7. Spoon into greased or papered muffin tins. Fill nearly to the top to achieve beautiful, full muffins.
8. Bake at 350 for 17-20 minutes until toothpick JUST comes out clean. DO NOT OVER BAKE
9. Let cool slightly then remove and serve or pack to take or wrap well and freeze. :)
