High Protein Muffins - Oatmeal, Nuts, Chopped Fruit, and Chocolate

Makes 6 regular sized muffins, or 4 large or 12 bite-sized. Each 120-calorie serving has: Fat 3.7g Saturated Fat 0.6g Total Carbohydrates 13.4g Dietary Fiber 2.3g Sugars 6.3g Protein 8.0g
Ingredients:
1/2 cup oats
1/2 cup liquid egg whites
1 scoop pro performance 100% whey protein vanilla
2 t splenda brown sugar
2 t ground flax seeds
2 t wheat bran
2 t semi sweet chocolate chips
2 t chopped walnuts (or seeds)
1 t chopped dried apricots
1 t craisins
1/2 tsp of baking powder
1/4 tsp salt
Directions:
1. Combine all ingredients in a mixing bowl.
2. Coat muffin tin with cooking spray.
3. Divide mixture evenly among muffin cups.
4. Cook for 15-18 minutes for regular sized muffins.
5. Enjoy before or after a workout!
