Adapted from Vegetarian Mother's cookbook, tasty high fiber, high calorie muffins
Ingredients:
2 tbsp coconut oil
2 tbsp honey
1 egg
1/4 cup applesauce
1 cup plain full-fat greek yogurt
1 cup oat bran
1 cup whole wheat pastry flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 carrots finely grated
1/4 cup chopped nuts (pecans, walnuts work best)
1/4 cup dried fruit (cherries, blueberries, raisins, currents)
1/4 cup unsweetened flaked coconut (large flakes work best)
Directions:
1. Preheat oven to 375
2. Grease or lined a muffin pan.
3. Combine wet ingredients (coconut oil through yogurt)
4. Combine dry ingredients in a bowl (oat bran through nutmeg) with a whisk
5. Place wet ingredients into dry and combine until just mixed.
6. Stir in grated carrots, nuts and dried fruit.
7. Batter will be very thick.
8. Spoon batter into muffin tin.
9. Bake for 25 minutes or until done.
