It is garden time and I like to use what I can from the garden to make up a winter storage of good foods. Everyone grows an abundance even if they have 1 plant!, so if your neighbors are not sneaking onto your porch in the dead of night to leave these morsels, then go steal away with some from their garden. Your neighbors will be glad to share, I know I am. Zucchini’s are so easy to grow but they multiply quickly! One way to get my kids to eat their spinach and veggies was to hide it in the sauce. Anyway I could! For the Dining on a Dollar Contest, ZUCCHINI was the main ingredient and I have taken to using this as a filler in many items to make it healthier. Rich in vitamins and potassium it is a great source for your little athletes and LOW in calories. I used chunks of zucchini about 1 in x 2 inches but if you really want to hide the zukes, shred them and they melt into the sauce. I like a chunky version myself.I hope you enjoy this easy to make and cost efficient recipe.
Ingredients:
1 (32 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 (1 1/4 ounce) packet spaghetti sauce, seasoning
4 ounces salsa (more if you like- heat your decision)
1 zucchini, diced
1 purple onion, diced
2 garlic cloves, mashed
1 teaspoon cumin
2 tablespoons italian seasoning
1 cup spinach, shredded or 1 cup swiss chard, stems removed or 12 ounces spinach, frozen, thawed and squeezed
1 lb hamburger (could also be a mix of ground meats)
1 red pepper, cut up (optional)
3 carrots, diced (optional)
pasta, of your choice
parsley
cheese, shredded
Directions:
1. Brown beef with onion, cumin, and garlic, drain, and set aside.
2. In a large kettle mix together onions, garlic,(hamburger if using) and all other ingredients, bring to a rolling boil, stirring frequently then turn to simmer for at least 30 minute.
3. The longer it simmers the richer the flavors.
4. Use over pasta and sprinkle parsley and shredded cheese over top.
