This is so traditional in South Africa. Have it with tea or when ever you feel like it!!
Ingredients:
250 g cake flour (half pd or 2 and a quarter cups or 560 ml)
25g granulated sugar (37,5 ml / 3 tablespoons)
10 ml baking powder (2 teaspoons)
1 ml salt (quater teaspoon)
125 g butter or margarine, room temperature(quater pound / 125 ml / half a cup)
3 egg yolks from large eggs
15 ml cold water (3 teaspoons)

75 ml smooth apricot jam (6 tablespoons)
3 egg whites
250 g sugar (half a pound / 250 ml / 1 cup)
160 g shredded coconut (6 ounces / 500 ml / 2 cups)
Directions:
1. Sift the flour, granulated sugar, baking soda and salt together.
2. Rub the butter lightly with fingertips into the dry ingredients.
3. Beat egg yolks and water together.
4. Mix in with the rest until a soft dough.
5. If the dough is still to stiff, add a bit of water.
6. Cover and put aside.
7. Pre-heat oven till 180 degrees.
8. Grease muffin baking tins.
9. Roll out the dough.
10. Cut big circles out.
11. Lay out the muffin pan with the dough to form a cup.
12. Spoon about 5 ml (one teaspoon) of apricot jam in each cup.
13. Whisk the egg whites until stiff.
14. Whisk the sugar gradually in until fluffy.
15. Mix the coconut in.
16. Spoon the mixture on top of the jam to cover.
17. Bake for 20 to 25 minutes.
18. Let cool before eating.
19. Very tasty.
