bakery quality hermit bars
Ingredients:
3/4 cup vegetable shortening (not butter)
3/4 cup granulated sugar
3/4 cup brown sugar
3 cups flour
2 eggs, beaten-save 1 tablespoon to brush on top of bars
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground cloves
1/2 teaspoon ginger
1/4 cup molasses
1/8 cup water
1 cup raisins (more if you wish)
1 cup broken nuts (usually walnuts)
Directions:
1. .Cream shortening with sugars. Add eggs (save 1 tablespoon for tops). Add dry ingredients alternately with liquids. Add nuts and raisins.
2. Divide dough into thirds. Spread into strips about 3 inches wide down a large greased cookie sheet. Shape strips evenly. space apart to allow for spreading. Using fingers or a brush, brush each strip with reserved egg.
3. Bake at 350 degrees for 12 to 15 minute Bars will be soft. Cool for at least 10 minute Cut into bars. To keep soft put in airtight container.
