Herbed Sweet Potato Cheese Puff |

This came today with my CSA shares box containing sweet potatoes and green onion. I haven't made it yet, but it sounds interesting with the spices and onion. Preparation and cooking time does not include cooking the sweet potatoes. Ingredients:
2 cups mashed sweet potatoes |
8 ounces low-fat cream cheese, softened |
1/4 cup milk |
2 eggs |
1/2 cup sliced green onion |
1/2 teaspoon basil |
1/2 teaspoon thyme |
1/2 teaspoon grated lemon zest |
1/2 teaspoon salt |
1/4 teaspoon pepper |
sour cream (to garnish) |
fresh sprig thyme (optional) or parsley (to garnish) (optional) |
Directions:
1. Preheat oven to 350. Place all ingredients in a medium mixing bowl and blend with an electric mixer at medium speed until well combined. Then beat on high until light and fluffy, about 1 minute. 2. Spoon mixture into a prepared casserole dish and bake, uncovered for 35-45 minutes or until a knife inserted in center comes out clean. 3. Cool 2-3 minutes and garnish with a dollop of sour cream and a sprig of fresh thyme or parsley, if desired. |
