Ingredients:
1 1/2 tablespoons butter
1/2 cup chopped scallion
1/4 cup chopped parsley (dill, and or or basil)
2 cups quick-cooking rice
2 cups vegetable broth or 2 cups chicken broth
1/4 teaspoon pepper
Directions:
1. In a medium saucepan, melt butter. Add scallions and herbs and cook, stirring, for 1 minutes.
2. Add rice, stir to coat grains and then add broth.
3. Bring to a boil over high heat, cover, remove from heat and let stand until liquid is absorbed and rice is tender, 5 minutes.
4. Season with salt and pepper to taste. Fluff with a fork before serving.
