Herbed Mustard Butter

I love this butter on scones and on hot pretzels.
Ingredients:
1 cup butter, softened (not margarine)
2 tablespoons fresh chives, finely chopped
1 teaspoon lemon juice
1/2 cup fresh parsley, finely chopped
2 tablespoons dijon mustard
Directions:
1. In medium bowl, beat all ingredients until light and fluffy.
2. Store in refrigerator up to 3 weeks. Allow to soften slightly before serving.
