Herbed Meat Loaf

Traditional meat loaf with brown rice instead of bread crumbs.
Ingredients:
2 lbs beef, ground, 85% lean meat / 15% fat
2 cups brown and wild rice blend, cooked
2 eggs
2 tbsp green pepper, dried
2 tbsp red pepper, dried
2 tbsp dehydrated onion
1 tbsp balsamic vinegar
1 tsp italian herb seasoning
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
Directions:
1. Pre-heat oven to 350ºF
2. Blend all ingredients by hand in a large bowl.
3. Shape into loaf about 3 x 6 x 15 and place in a glass baking dish.
4. Bake at 350ºF for 60-90 minutes until a thermometer measures 185ºF when insterted in the middle.
5. Remove from oven and let sit for 15 minutes.
6. Cut into 3/4 slices.
