my daughter sara (10 years old) came up with this last night for dinner. since we make our own goat cheese I am always thinking of different ways to use it. she paired it with pasta with basil. it was very nice to look at and tasted wonderful.
Ingredients:
6 pork chops (i use boneless)
1/2 teaspoon minced garlic clove
1/2 teaspoon seasoning salt
1/2 teaspoon basil
1 dash black pepper
1/2 lb herbed goat cheese
Directions:
1. set over to high broil 500 degrees.
2. rub the chopped garlic on both sides of the uncooked pork chop.
3. combine remaining spices in a small dish to make a spice rub.
4. rub the pork chops with the spices.
5. place spiced chops on a broiler pan.
6. put pan in oven.
7. let cook about 5 minutes one side.
8. turn.
9. cook on other side about 5 more minutes.
10. when pork chop is about done spread the goat cheese on top of the chop and return to the over.
11. watch very carefully as the cheese can burn.
12. remove from oven when the cheese is lightly browned.
