Herbed Cheese Popovers

Perfect side for so many dishes - cheesy, herb popovers - light and flavorful. I substitute different cheeses and herbs, based on the meal.
Ingredients:
2 eggs, beaten to blend
1 cup milk
1 cup all flour
1/2 cup sharp cheddar cheese, grated
1/2 t salt
1/2 t thyme
1/4 t sage
1/4 t basil
Directions:
1. Position rack in lower third of oven
2. Grease muffin pan for 12
3. Combine all ingredients and mix until blended. Batter will be lumpy.
4. Fill each of the muffin cups about 2/3 full.
5. Place in COLD oven and set temperature at 450.
6. Bake 30 minutes without opening oven door.
7. Remove popovers from oven and turn off heat.
8. Puncture all 4 sides of each popover into pan at angle.
9. Return to oven, close door and dry 10 minutes.
10. Serve immediately.
