Herbed Breakfast Potatoes

A very elegant twist on traditional homestyle breakfast potatoes, with a ton of flavor. All natural ingredients.
Ingredients:
8 medium sized red potatoes
3-4 cloves garlic, chopped
olive oil
1/4 tablespoon chives, fresh, snipped
1/4 tablespoon parsley, fresh, minced
salt and pepper
Directions:
1. Microwave or boil potatoes until soft.
2. Slice potatoes into 1/4 inch rounds, so each piece of potato is like a wheel.
3. Heat Olive Oil over medium heat.
4. Brown potatoes on each side. 5-7 minutes each side usually.
5. Add garlic and fresh herbs, saute for 1-2 more minutes until herbs become nice and aromatic.
6. Salt and Pepper to taste and serve with eggs, sausage, bacon, or whatever your favorite breakfast sides are!
