Ingredients:
spring lentil soup
2 pounds baby red potatoes, scrubbed
olive oil, to taste
salt, to taste
black pepper, to taste
parsley, freshly chopped, to taste
Directions:
1. Bring a pot of lightly salted water to a boil. Cook the potatoes until tender, 10 to 15 minutes. Toss with the olive oil, salt, pepper, and parsley. Reserve 6 potatoes for Spring Lentil Soup.
