Herb Salad Dressing Claudio's

This is from Bon Apetite from 1981 - You Asked For It. It's the house dressing for Claudio's restaurant, a place that may not be around anymore. I saw the ingredient of spinach and knew I had to try it. The only other dressing that has spinach in it that I know of is Muriel Hemmingway's spinach salad dressing. I'm substituting safflower with grape seed oil and parsley with cilantro.
Ingredients:
2 cups loosely packed spinach
1 cup loosely packed fresh parsley leaves
1/3-1/2 cup cider vinegar (or to taste)
1/2 cup loosely packed fresh basil leaf
1/4 avocado, peeled and chopped
6 garlic cloves
1 1/2 tablespoons lemon juice
1 1/2 teaspoons salt and pepper (each or to taste)
1/2 teaspoon ground cumin
1 pinch cayenne
1 cup olive oil (plus 2 tbls)
1 cup safflower oil (plus 2 tbls)
Directions:
1. In a blender or food processor fitted with the steel blade blend in all ingredients except oil.
2. With motor running add 1 cup plus 2 tablespoons each of olive oil and the safflower oil in a stream.
3. Blend until mixture is smooth and thick.
4. If the dressing separates, beat it gradually into a large egg yolk. Makes about 3 1/4 cups.
