Herb-Grilled Trout

Ingredients:
1/4 cup dry white wine
1 tablespoon olive oil
4 (8-ounce) dressed rainbow trout
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup thinly sliced green onions
2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh dill
cooking spray
4 lemon wedges
Directions:
1. Prepare grill or broiler.
2. Combine the wine and oil; brush inside and outside of fish. Sprinkle the insides evenly with salt, pepper, onions, and fresh herbs.
3. Place the fish, skin side down, on grill rack or broiler pan coated with cooking spray, and cook for 5 minutes or until the fish flakes easily when tested with a fork. Serve with lemon wedges.
