Herb-Crusted Polenta Rounds (Robin Miller)

Ingredients:
olive oil cooking spray
16 -ounce tube prepared polenta, sliced into 1/2-inch thick rounds
salt and ground black pepper
1/2 cup minced fresh herbs
Directions:
1. Oil grill or saute pan on medium-high heat.
2. Season polenta with salt and pepper. Arrange polenta rounds in pan. Cook 7 to 10 minutes, turning once, until polenta rounds are golden brown and heated through.
3. Sprinkle with fresh herbs and serve.
