Herb Crostini with Blue Cheese Spread and Caramelized Onion Relish

Crostini is a fresh way to use that leftover half baguette or other bread that's hanging around. Experiment with flavors-try dry spices such as chili powder, cumin, and curry; different herbs; or flavored oils like sesame, walnut, or spicy chili oil. Make crostini 3 days in advance; let cool completely, and store at room temperature in an airtight container. It'll also add a flavorful crunch when served with soup, broken up atop salads, or as an hors d'oeuvre. Prep: 60 minutes, Bake: 10 minutes.
Ingredients:
1/2 (20- to 25-inch) baguette
2 tablespoons olive oil
1 tablespoon chopped parsley
1 tablespoon chopped dill
1/4 teaspoon sea salt
3/4 teaspoon freshly ground pepper
creamy blue cheese spread
caramelized onion relish
Directions:
1. Preheat oven to 400°.
2. Slice bread into 1/4-inch slices at a slight angle, and arrange in a single layer on a 15- x 10- x 1-inch jellyroll pan or cookie sheet.
3. Stir together olive oil and herbs. Brush bread lightly on one side with herb mixture, and sprinkle with sea salt and pepper. Bake at 400° for 10 to 12 minutes or until golden brown and crunchy.
4. Cool completely. Top with Creamy Blue Cheese Spread and Caramelized Onion Relish, and serve immediately.
